Easy flavorful salads are my favorite things to make. I first had a black eyed pea salad while at lunch with a friend and all evening I kept thinking how I could replicate the flavors. I’ve made several versions of this and even found a couple recipes but this version is my favorite. It’s quick and easy so anyone can make it.
2 cans of Glory Black Eye Peas
1/4 of a red and green bell pepper diced
1/4 of a red onion
1/2 tsp of garlic
salt and pepper to taste
1/4 cup of Ken’s Steak House Lite Balsamic Vinaigrette
Pour black eye peas into a strainer and rinse, strain them and allow all the water to drain off. Add the peas to a large bowl. Dice red and green bell pepper, red onion, and garlic. Add to black eyed peas. Mix together. Add salt and pepper to taste. Add Balsamic dressing, mix and taste. Feel free to add more dressing if you would like. cover bowl and place in the refrigerator until ready to serve.
